Dissertation for asking the scientific degree of the Technical Science
Candidate by speciality 05.18.13 – Canned foods technology. – Odessa
State Academy of Food Technologies, Odessa, 1999.

The dissertation is devoted to working out of the technology and
production the stable powder and liquid food colorants of the black
elderberry. There has been studied the structure of the elderberries
growing in two regions of Ukraine, and the products of its
over-production by the complex of biochemical, chemically-technical
figures, ingrediental and color characteristic of pigments. The
technologic methods and regimes of treatment of the elderberry raw
material are grounded scientifically on the methods of mathematical
modulation. There has been worked out the prioritet
sedimentically-regeneration method of selection the coloring substances.
There has been proposed the mathematical model of selection the type of
the sedimenter and the

conditions of pigments precipitation.

There has been grounded the parameters of the process of membranic and
vacuum-steamed concentration of extract pigments. The technological and
process-apparatical scheme of producing the colorants have been worked
out. There has been given their qualitative characteristic by the
figures complex. There have been based the terms and conditions of
storing the recieved types of food colorants. The project of technical
documentation has been prepared, the investigation of elderberry
colorants in the different branches of food industry has been conducted.
